Drunken Cake
Drunken Cake is one of the best things I found while working a vintage in Portugal. It was a cake that often appeared after dinner and it was delicious... I had to find out what it was. As my Portuguese language skills were only really a few winery related terms and the odd swear word, it was tricky trying to work out what this cake was actually called let alone find a recipe. One evening though I was explaining this cake to the lovely lady of the house where we were staying and she knew exactly what I was talking about. Lucky she did as it was my last week in Portugal and I couldn't have left without the recipe. She very carefully translated it for me and although her descriptions of the quantities were unusual, between us we worked it out and I have now made this cake more times that I can remember. Its name is Drunken Cake and that's because its a cake that is made with white fortified wine and is then soaked in a syrup with more white fortified wine
